Garlic Olive Oil Roasted Carrots with Herbs

Tender, caramelized carrots roasted in VIOS garlic olive oil and fresh herbs, creating a simple yet flavorful side dish perfect for any meal.

Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp VIOS garlic extra virgin olive oil
  • 1 tsp fresh thyme leaves
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with garlic olive oil, thyme, salt, and black pepper in a baking dish.
  3. Roast for 30-35 minutes, stirring halfway through, until carrots are tender and caramelized.
  4. Sprinkle with fresh parsley before serving if desired.
